OMG. Omg. When I saw this recipe in my Frugal Vegan cookbook earlier this week, I just knew that I had to give it a try ASAP.
Sometimes I need a little comfort food in my life and this burger definitely hit the spot. It was insanely flavorful, filling, and just downright delicious – the perfect thing for a Friday night dinner.
The “burger” mixture is super simple with chickpeas and BBQ sauce (I made my own, recipe here) and topped with a pineapple / cabbage slaw. Added everything to an Udi’s wheat bun and we were good to go!
